- Try adding fresh kaffir lime leaves or lemongrass for enhanced fragrance.
- Always cook coconut milk on low heat as the milk will split on high flame.
- Cook the beef until it’s perfectly dark brown on all sides.
- Add dry-toasted desiccated coconut for a nutty and more authentic flavour.
- Use tamarind pulp in place of lemon juice.
- Add palm sugar in place of brown sugar for an extra hint of caramel. It is less sweet than brown sugar and has a smokier flavour.
- This recipe gets better with time, so simmer it for as much time as possible in a slow cooker.
- Before adding the coconut milk, sauté the meat until excess water has evaporated.
